White Kidney Bean Soup (Bulgarian)

Ingredients
  

  • 500 grams White Kidney Beans
  • 1 Red Pepper
  • 1 Onion
  • 1 Carrot
  • 1 can Chopped Tomatoes
  • 1 tsp. Salt
  • 1 tsp. Red Grounded Pepper
  • 1 tsp. Dry Mint
  • 2 Litres Water

Instructions
 

  • Soak the kidney beans in water preferably for 1 night. The water has to cover the beans.
    Step 1 - Soak the beans in water
  • Preheat the hob, put the soaked beans in water. Once the water starts boiling, change it. Do this 2 times to be sure there is no foam left in the pot while cooking the soup. Cut the vegetables (onion, red pepper, carrot) and add them to the boiling kidney beans. Lower the heat, because the beans do not cook well when the temperature of the hob is too high. They need to cook slowly.
    Step 2 - Add the vegetables
  • Season the soup with oil, salt, black pepper, red grounded pepper and dry mint leaves. These ingredients will give the authentic Bulgarian taste of the soup. A great addition is a vegetable stock cube. Boil the soup for at least 1.5 hours or until the beans become soft.
    Step 3 - Season the soup
  • The white kidney bean soup definitely requires tomatoes. The easiest way is to pick a can of chopped tomatoes, tomato paste or of course you can use fresh tomatoes. Just make sure you add them when the beans are almost fully cooked. If you add tomatoes before, they will prevent the beans from getting soft or at least it will take a lot of time.
    Step 4 - Add tomato paste at the end
  • Boil the soup for another 15 minutes, this is enough time for the tomatoes to blend well with the rest of the ingredients.

Notes

Great additions to the white kidney bean soup are vinegar or sausage. 
If you are a fan of spicy food, you can also add dried whole chilli peppers.
